The wild form grows as a biennial or perennial plant along limestone sea cliffs in coastal Europe, while domesticated varieties are typically grown as annuals or biennials in temperate climates worldwide. Cabbage proper (var. capitata) forms a dense head of overlapping leaves that can be green, red, or purple. The species demonstrates extraordinary morphological plasticity, with different cultivars emphasizing different plant structures: leaves (cabbage, kale), flower buds (broccoli, cauliflower), lateral buds (Brussels sprouts), or stems (kohlrabi). All varieties belong to the family Brassicaceae (formerly Cruciferae), characterized by four-petaled flowers arranged in a cross shape. Cabbage has been cultivated since ancient times, with evidence of domestication dating back over 2,500 years in Europe. It thrives in cool, moist climates and is grown commercially on every continent except Antarctica. The plant is rich in vitamins C and K, fiber, and various phytonutrients, making it a nutritionally valuable crop globally. Modern cabbage cultivation involves both traditional field production and controlled environment agriculture. The crop is susceptible to various pests including cabbage worms, aphids, and flea beetles, and diseases such as clubroot and black rot, requiring integrated pest management strategies.

How to identify

Cabbage (var. capitata) forms a compact head of smooth or crinkled leaves ranging from pale green to deep purple, typically 15-30 cm in diameter. The outer leaves are larger, spreading, and often waxy or glaucous. Wild B. oleracea grows 1-2 meters tall with yellow flowers having four petals in a cross arrangement, typical of the Brassicaceae family. Leaves are fleshy, blue-green, and hairless with a distinct waxy coating. The plant produces silique fruits (elongated seed pods) 5-10 cm long containing small round seeds.

Habitat

Wild cabbage inhabits coastal limestone cliffs and rocky shores in maritime climates. Cultivated cabbage grows best in well-drained, fertile soils with full sun exposure in temperate regions. The crop prefers cool growing conditions with temperatures between 15-20°C and consistent moisture.

Distribution

Native to coastal areas of southern and western Europe, particularly along the Atlantic coasts and Mediterranean. Cultivated worldwide in temperate and subtropical regions, with major production in China, India, Russia, South Korea, Ukraine, and throughout Europe and North America. Wild populations persist in coastal Britain, France, Spain, and parts of the Mediterranean.

Diet

Requires well-drained, fertile soil rich in organic matter with pH 6.0-7.5. Needs full sun (at least 6 hours daily) and consistent moisture throughout the growing season. Heavy feeder requiring nitrogen, phosphorus, and potassium, plus adequate calcium to prevent tipburn. Benefits from cool temperatures and performs poorly in heat above 25°C.

Behavior

Biennial growth habit, producing vegetative growth (the edible head) in the first year and flowering in the second year after vernalization (cold exposure). Forms tight heads through modified leaf development where inner leaves grow densely packed without elongating. Exhibits photoperiodic responses and requires vernalization for flowering. Under stress or premature exposure to cold, may bolt (prematurely flower) before forming proper heads.

Reproduction & life cycle

Biennial reproductive cycle requiring vernalization to initiate flowering. After overwintering or cold treatment (4-10°C for 6-8 weeks), plants bolt and produce tall flowering stalks with yellow four-petaled flowers. Flowers are insect-pollinated, primarily by bees. Cross-pollination occurs readily between different B. oleracea varieties. Seeds develop in silique pods, with each pod containing 10-20 seeds. Seeds remain viable for 4-5 years under proper storage.

When to look

Plant in early spring or late summer for fall harvest in temperate regions. Spring plantings harvest in summer; fall plantings overwinter in mild climates for early spring harvest. Wild plants flower April-September in native range.

One of humanity's most important vegetable crops with over 4,000 years of cultivation history. Central to cuisines worldwide including sauerkraut (Germany), kimchi (Korea), coleslaw (Netherlands/America), and cabbage rolls (Eastern Europe). Used medicinally since ancient times for treating ulcers, inflammation, and digestive issues. Rich in symbolic meaning representing prosperity in some cultures. Traditional remedy for wound healing when leaves applied topically. The diversity of forms (cabbage, broccoli, kale, etc.) represents one of agriculture's greatest examples of artificial selection.
