Daucus carota is a biennial herbaceous plant that has been cultivated for over a thousand years, with the familiar orange carrot being developed through selective breeding from wild populations. The wild form, often called Queen Anne's lace, features white umbel flower clusters and a thin, pale taproot, while domesticated varieties produce thick, fleshy taproots in colors ranging from orange to purple, red, yellow, and white. The plant typically grows 30-100 cm tall in its first year, developing a rosette of finely divided, feathery leaves and storing energy in its taproot. In its second year, the plant bolts, producing a tall flowering stem with compound umbels of small white flowers, often with a single dark purple flower in the center. The domesticated carrot is harvested in its first year before flowering, when the taproot is at its peak size and sweetness. Wild carrot grows along roadsides, in fields, and disturbed areas, and is considered invasive in some regions including North America and Australia. Carrots are rich in beta-carotene, fiber, vitamin K, potassium, and antioxidants. The orange color, due to high beta-carotene content, was stabilized in Dutch varieties in the 17th century. Today, carrots are one of the most widely consumed root vegetables worldwide, eaten raw, cooked, or juiced, and are an important crop in temperate and subtropical regions globally.

How to identify

Domesticated carrots are identified by their fleshy, cylindrical to conical taproot (typically 5-30 cm long), ranging in color from orange to purple, red, yellow, or white. The leaves are bipinnate or tripinnate, finely divided and feathery, arranged in a basal rosette. Wild carrot (Queen Anne's lace) has similar ferny foliage but with a thin, whitish taproot. Flowering stems reach 30-100 cm tall, bearing compound umbels of tiny white flowers (2-3 mm across) arranged in flat-topped clusters 3-7 cm wide, often with a single dark purple flower at the center. Seeds are oval, 2-4 mm long, with bristly ridges. The plant emits a distinctive carrot-like aroma when crushed.

Habitat

Domesticated carrots are cultivated in gardens, farms, and agricultural fields with well-drained, loose, sandy or loamy soils. Wild carrot (Daucus carota subsp. carota) thrives in disturbed habitats including roadsides, fields, meadows, pastures, waste areas, and coastal grasslands. It prefers full sun and well-drained soils but tolerates a range of conditions from dry to moderately moist.

Distribution

The wild carrot is native to Europe, southwestern Asia, and parts of North Africa. It has been introduced and naturalized across temperate regions worldwide, including North America, Australia, New Zealand, South America, and parts of Asia. Domesticated carrots are now cultivated globally, with major production in China, Uzbekistan, the United States, Russia, and Ukraine. The crop is grown commercially in temperate and subtropical zones on every inhabited continent.

Diet

Carrots require well-drained, loose, fertile soil with a pH of 6.0-6.8, free of stones and compacted layers to allow proper root development. They need full sun (at least 6 hours daily) for optimal growth. The plants benefit from consistent moisture, especially during root development, but cannot tolerate waterlogged conditions. Carrots are moderate feeders requiring adequate phosphorus and potassium; excessive nitrogen promotes foliage growth at the expense of root development. Sandy loam soils are ideal for producing straight, well-formed roots.

Behavior

As a biennial, the carrot follows a two-year growth cycle. In the first year, it develops vegetative growth with a rosette of leaves and stores carbohydrates in the swelling taproot. Cultivated carrots are typically harvested 60-80 days after sowing, during this first-year phase. If left unharvested, the plant overwinters (requiring vernalization in cold climates) and bolts in the second year, producing a tall flowering stalk. The umbel flowers open sequentially from the outer edge inward over several weeks. After flowering, the umbel contracts into a concave 'bird's nest' shape as seeds mature.

Reproduction & life cycle

Carrots reproduce sexually through seeds. In the second year, the flowering stem produces compound umbels attracting various pollinators including bees, flies, and beetles. Each small flower develops into a schizocarp that splits into two single-seeded mericarps (commonly called seeds), which are covered in small bristles aiding wind and animal dispersal. A single plant can produce thousands of seeds. Seeds typically germinate in 1-3 weeks under optimal conditions (15-25°C). Commercial carrot production uses direct seeding, while wild populations self-seed readily. The plant can also reproduce vegetatively from root fragments in some conditions.

When to look

Seeds are sown in early spring through summer depending on climate (March-July in temperate zones); harvest occurs 60-120 days after sowing, typically summer through fall. Wild carrot flowers bloom from late spring through early fall (May-September in Northern Hemisphere). In mild climates, carrots can be grown and harvested year-round.

Cultural significance

Carrots have significant cultural and culinary importance worldwide, featuring prominently in cuisines from European stews to Asian stir-fries and Middle Eastern salads. The orange carrot became a symbol of Dutch agriculture and was popularized in the 17th century. Wild carrot seeds and roots have been used in traditional medicine as a diuretic, stimulant, and for digestive ailments. The name 'Queen Anne's lace' references Queen Anne of England and the flower's resemblance to delicate lacework. Carrots are associated with improved vision due to vitamin A content, a notion popularized during World War II. The plant appears in folklore, with wild carrot historically used as a contraceptive (though effectiveness is unproven and unsafe).
