This mushroom naturally grows in association with the roots of herbaceous plants in the Apiaceae family, particularly Eryngium species (sea holly), from which it derives its species name. In the wild, P. eryngii is found in grasslands, steppes, and coastal areas across the Mediterranean basin, North Africa, the Middle East, and extending into Central Asia. It is a saprotrophic fungus that decomposes dead plant material, particularly the roots of its host plants. The king oyster has become one of the most commercially important cultivated mushrooms globally, second only to the common oyster mushroom among Pleurotus species. This species is notable for its excellent storage qualities and versatility in cooking, with the dense stem being particularly valued for its ability to hold up to grilling, roasting, and sautéing. The mushroom has been cultivated commercially since the 1990s and is now produced on a large scale in Asia, Europe, and North America. How to identify
The king oyster mushroom is identified by its distinctive thick, white, cylindrical stem (5-10 cm tall, 2-5 cm diameter) and relatively small tan to brown cap (3-12 cm diameter). The cap is flat to convex with smooth edges when young, becoming more irregular with age. Gills are white to cream-colored, running slightly down the stem (decurrent). The flesh is firm and white throughout, with no discoloration when bruised. The mushroom has a mild, pleasant odor reminiscent of anise or almond. Unlike typical oyster mushrooms, the stem is the dominant feature and is thick and fleshy rather than thin and lateral.
Habitat
King oyster mushrooms grow in grasslands, steppes, meadows, and coastal areas, associated with the roots of herbaceous plants in the Apiaceae family, particularly Eryngium (sea holly) and Ferula species. They prefer calcareous soils in temperate and Mediterranean climates, typically appearing after rainfall in spring and autumn. Wild specimens are found at elevations from sea level to montane zones.
Distribution
Native to the Mediterranean region including Southern Europe (Spain, Italy, Greece), North Africa (Morocco, Tunisia), the Middle East (Turkey, Iran), and Central Asia extending to parts of China and India. The species has a range from the Atlantic coast of Morocco eastward through the Mediterranean basin and into temperate Asia.
Diet
As a saprotrophic fungus, Pleurotus eryngii obtains nutrition by decomposing dead organic matter, particularly the dead roots and root crowns of umbelliferous plants. It secretes enzymes to break down cellulose and lignin in plant material. For cultivation, it grows on supplemented substrates containing sawdust, straw, cottonseed hulls, or other agricultural waste products enriched with nutrients.
Behavior
King oyster mushrooms typically fruit in flushes following periods of rainfall when temperatures are moderate. Individual fruiting bodies develop from mycelium colonizing dead plant roots underground. Growth is relatively slow compared to other oyster mushrooms, taking 2-3 weeks from pinning to maturity. The thick stem structure allows the mushroom to support itself upright rather than growing laterally like other Pleurotus species. Fruiting bodies can persist for 1-2 weeks in favorable conditions.
Reproduction & life cycle
Reproduction occurs through white spores (8-11 × 3-5 micrometers) produced on the gills and released into the air. Spores germinate under appropriate conditions to form hyphae, which grow and fuse with compatible mating types to form dikaryotic mycelium. This mycelium colonizes substrate and, when environmental triggers occur (temperature change, moisture, light), produces primordia that develop into mature fruiting bodies. The species can also spread vegetatively through mycelial growth.
