Maize (Zea mays) is a tall annual grass domesticated approximately 9,000 years ago in southern Mexico from its wild ancestor teosinte. It is now one of the world's most important cereal crops, grown globally for human consumption, animal feed, and industrial products.

Maize, commonly known as corn in North America and Australia, is a large-grained cereal grass that has become a staple food crop worldwide. Domesticated from the wild grass teosinte (Zea mays subsp. parviglumis) in the Balsas River valley of Mexico, maize has been transformed through millennia of selective breeding into one of humanity's most productive crops. The plant typically grows as a single tall stalk bearing large leaves and produces ears containing kernels arranged in regular rows. Modern maize exhibits remarkable diversity, with thousands of varieties adapted to different climates, elevations, and uses. Kernel colors range from white and yellow to red, blue, and nearly black. Different types include dent corn (field corn), flint corn, sweet corn, popcorn, and flour corn, each suited to specific culinary or industrial purposes. How to identify

Male flowers form a terminal tassel at the top of the plant, consisting of paired spikelets that release pollen. Long, thread-like styles (silks) emerge from the ear tip to catch pollen. The mature ear contains kernels arranged in even rows, typically 12-20 rows per ear, with kernel color and size varying by variety.

Originally domesticated in southern Mexico approximately 9,000 years ago, maize spread throughout the Americas in pre-Columbian times. Major producing regions include the United States (particularly the Corn Belt), China, Brazil, Argentina, Ukraine, India, Mexico, Indonesia, and South Africa. The crop has been adapted to grow from approximately 58°N to 40°S latitude.
Diet
Maize requires fertile, well-drained soil rich in nitrogen, phosphorus, and potassium. It performs best in loamy soils with pH 5.8-7.0 and demands full sun (minimum 6-8 hours daily). The crop is a heavy feeder requiring significant nitrogen inputs, particularly during rapid vegetative growth. Adequate water is critical, especially during pollination and grain fill stages, with total water requirements of 500-800 mm depending on variety and climate. Deep root systems allow access to soil moisture and nutrients.
Behavior

Each silk must receive pollen to produce a kernel, requiring successful pollination of hundreds of individual flowers per ear. The life cycle from planting to harvest typically spans 90-200 days depending on variety and growing conditions. Seeds are mature when kernels harden and moisture content drops to 20-25%. Modern cultivated maize cannot reproduce without human intervention, as seeds remain trapped within husks. Propagation is exclusively through seed, with hybrid varieties requiring annual seed purchase while open-pollinated and heirloom varieties can be saved and replanted.
When to look
Maize is typically planted in spring after the last frost when soil temperatures reach 10-15°C (50-60°F). Growth occurs through summer with tasseling in mid to late summer and harvest in late summer to autumn depending on variety and region. In tropical areas with year-round warmth, multiple crops per year are possible. Peak observation for identification is during tasseling and silk emergence (reproductive stage).
Cultural significance
Maize holds profound cultural significance, particularly in Mesoamerican civilizations where it was considered sacred. The Maya and Aztec believed humans were created from corn, and the crop featured prominently in religious ceremonies, art, and mythology. Traditional preparation methods like nixtamalization (alkaline processing) enhance nutritional value and remain culturally important. Maize is central to countless cuisines worldwide: tortillas, tamales, and pozole in Mexico; polenta in Italy; grits and cornbread in the southern United States; sadza in Zimbabwe; and chicha beverages in the Andes. The crop enabled the development of major civilizations and remains a symbol of agricultural heritage. Modern uses extend to medicine (corn silk as a traditional diuretic), biodegradable materials, and industrial applications. Heirloom varieties are preserved by indigenous communities and seed-saving organizations as living cultural patrimony.
